David Kohl explains the process of opening + decanting an old & rare wine when it shows signs of fragility, such as this 1967 Chave Hermitage from The Rhone Valley. It is not a good idea to insert a corkscrew in the middle of the cork, because the brittle cork may break or drop into the bottle. Instead, the cork should be carefully removed by gripping its sides with a device known as an Ah-So. When decanting the wine, it is important to catch the sediment with a strainer. This bottle does display its age, and is likely at least 10 years past its peak drinking window. David Kohl explains the nuances of examining + enjoying Old & Rare wines, highlighting an impeccable bottle of 1969 Remoissenet Premier Cru from Burgundy’s Volnay region. Old & Rare wines are perfectly preserved, having been temperature controlled during the aging process. Most likely these wines are located in private collector cellars, rather than retail stores. When the cork removes smoothly and completely intact, this is an excellent sign. As to the instance of low shoulder fill, this is not necessarily an indication of fault. This 1969 Remoissenet has a low shoulder but a tasting reflects that the 55 year old vintage is still in fine form for a classic experience. David Kohl demonstrates how to navigate the intricacies of a German wine label, noting that bottle color is the first key :clue : brown bottles signify grapes from The Rhine Region, green bottles signify grapes from The Mosel Region, blue bottles signify grapes from multi regions. Along with producer and vintage, German wine labels also indicate the level of “pradikat “ to identify dry wines such as Kabinett through 5 further degrees of sweetness. Located at the foot of The Andes Mountains, the wines are rich in minerality and retail in the unbelievable price range of $15. David Kohl discovered the wines of Chateau Jean Faux during a visit to Bordeaux Superieur and was so impressed that he added them to his import portfolio. The wines are certified organic and retail at the value centric level $30 range. Chateau Jean Faux was owned since 2002 by Pascale Collette who restored the vineyard and its limestone soils to an impressive growing condition and today is operated by his family. Pascale Collette was by trade a wine barrell maker, specializing in French oak.
